Ginger Concept sits in the downtown area of Chania, far enough from the harbour to have escaped the tourist-trap gravity that pulls so much of the old town into mediocrity. It's an elegant spot — footpath dining out front, a tastefully furnished interior — but the real reason to come is the back patio, a lush, vegetation-wrapped space with a retractable roof and a gentle jazz or chillout soundtrack that seems calibrated specifically to make you forget you had anywhere else to be.
It's the kind of place that rewards slowing down. The café-bistro format means it works across most of the day — coffee and pastry in the morning, a leisurely lunch, a glass of wine in the late afternoon — and the atmosphere holds up across all of them.
