Chef Rat — a Cambodian chef with experience across some of Siem Reap's more ambitious kitchens — fuses elements of European technique with traditional Cambodian cooking, producing dishes that feel genuinely inventive without losing sight of where they come from. Classics like amok trey and beef lok lak are reimagined with fresh perspective, while the finest local ingredients ensure the flavours stay bold and grounded. The presentation is a step up from the city's more casual Khmer spots, but the prices remain refreshingly reasonable.

The menu includes a strong selection of plant-based dishes, making Jomno one of the more thoughtful options in Siem Reap for vegetarian and vegan diners — without it feeling like an afterthought.
